Lemon, Strawberry & Poppy Seed (VEGAN)

This kit makes an exceptionally moist and not-too-sweet cake, which smells like literal heaven as it turns golden in the oven. The baked cake has a satisfyingly dense crumb, which is complemented by the gentle crunch of the poppy seeds. The flavours of the lemon and strawberries work together to taste like the essence of summer (although this cake can be made all year round if you use frozen (but thawed) strawberries, which work just as well as fresh).

This kit is vegan-friendly if you use dairy-free milk and oil instead of butter.

(You will need: milk, oil/butter, lemon, strawberries)

Ingredients: Organic Unbleached Wheat Flour, Cane Sugar, Organic Powdered Sugar, Blanched Almond Meal, Poppy Seeds, Baking Powder, Freeze-Dried Strawberries, Freeze-Dried Lemons, Salt.

Flourless Dark Chocolate & Gold Leaf (GF)

This kit makes the MOST decadent, fudge-like chocolate cake. Ever. It's based on one of the recipes The Caker was founded on, which I once swore I'd never give away, but alas I couldn’t not. The quality of the chocolate is the key to this cake’s glorious richness, so inside the box, you'll find the same chocolate we use to bake this recipe in my bakery every day. The sheet of edible 24k gold leaf is intended to be delicately pressed onto the top of your cake to make it even more lavish.

This kit is gluten-free.

Ingredients: 72% Callebaut Chocolate Callets, Cane Sugar, Blanched Almond Meal, Dutch Cocoa Powder, Edible Gold Leaf.

Coconut, Raspberry & Kaffir Lime (VEGAN)

This cake mix is based on one of my first ever recipes, which has stood the test of time. The raspberry laden cake is only subtly sweet and has the most moreish lamington-esque texture.

Adding the freeze-dried kaffir lime powder to the cake and glaze is optional, but I truly adore the intensely fresh and fragrant flavour that it imparts and I'm certain you will too.

Decorate your finished cake with the sachet of freeze-dried raspberry crumble for an unmistakable Caker touch. This kit is vegan-friendly if you use dairy-free milk and oil instead of butter.

Ingredients: Organic Unbleached Wheat Flour, Dried Coconut (Coconut, Sulphites), Icing Sugar, Caster Sugar, Blanched Almond Meal, Baking Powder, Freeze-Dried Raspberries, Freeze-Dried Ground Kaffir Lime Leaf, Salt.

Spiced Carrot Cake & Salted Caramel

This kit creates a very sticky carrot cake that is gently spiced with cinnamon, nutmeg and ginger. I chose to put dried currants in this recipe because I love the little sweet yet tart bursts they add to each bite. Of course, cream cheese icing is an absolute classic with carrot cake and to top everything off, it comes with a sachet of organic salted caramel to drizzle over.

Ingredients: Brown Sugar, Icing Sugar (Sugar, Tapioca Starch) Wheat Flour, Caramel (12%) (organic cream (milk), organic cane sugar, organic tapioca syrup, organic butter (organic cream, salt) organic vanilla extract, sea salt), Ground Almonds, Dried Currants, Cinnamon, Baking Powder (Sodium Bicarbonate, Sodium Acid Pyrophosphate, Corn Starch) , Nutmeg, Ginger, Salt, Baking Soda (Sodium Bicarbonate).
